Preparation of good guacamole requires a good pico de gallo that has sat a while, so that all the flavors have had a chance to come together. This is also true of guacamole, so even though it doesn’t take 60 minutes to make this recipe, be sure to let the pico de gallo rest for 30 minutes before adding it to the avocados. 

4 to 6 servings 

Preparation time 60 minutes


Pico de Gallo

1/2c.  finely diced tomatoes

1/2c.  finely diced red onion

1/8c.  finely diced jalapeno filets

1 tsp. finely chopped cilantro

1/2 tsp. sea salt 

1 tsp. red chilhuacle chile powder 

Juice of 2 limes

Uniformly dice the tomatoes, onions and jalepenos. Place all ingredients into a mixing bowl and stir periodically over the 30 minutes of resting time.



8 ripe avocados

1c. pico de gallo

Juice of 2 limes

1 tsp. sea salt

Remove the pits from the avocados and place the flesh into a mixing bowl with the rest of ingredients. Mash with a potato masher until it reaches a slightly smooth but a little bit chunky consistency. Let the guacamole rest a while and stirring again before service.
